What You'll Do

Vegetables may be good for you, but that's not the only reason the chefs at Suite ThreeOhSix obsess over them. In their supper club's kitchen, instructors teach the secrets to creating vegetarian meals that burst with flavor. After an initial introduction to the tools and ingredients you'll be using, the instructor will lead you through the preparation of a handful of vegetable-focused dishes.

    As your food cooks, the instructor will discuss the nutritional benefits of the dishes and field food-related questions.

    Each class will create the following dishes: swiss chard, quinoa, and caramelized onion tacos; thai carrot bisque; cauliflower steak with caramelized sweet potato and curried aioli; and baked spiced peaches with vanilla syrup.

When she set off for college, Daphne Cheng was resigned to a professional life as an eventual doctor or engineer. But her creative side got the better of her and she took a risk, dropping out of UC Berkeley to pursue culinary school in New York. It paid off. At just 24 years old, she has already opened her own supper club and experimental kitchen, Suite ThreeOhSix, and has prepared food for such celebrities as Vera Wang, Peter Max, Alec Baldwin, John Bartlett, and Lea Michele.
