What You’ll Do
People have consumed chocolate for around 500 years, dating back to the Mayans and the Aztecs, but naturally, chocolate-making techniques have evolved considerably since then. During this series of demonstrations, confectioner Joseph Marmor takes you behind the scenes at Le Chocolatier, exposing the inner workings of the production area and its various chocolate-making machines. Afterward, hands-on demonstrations allow each guest to craft their own handmade truffles and hand-dipped chocolate fruit, pretzels, and cookies.
Upon arrival, you’ll be greeted with complimentary chocolates from Le Chocolatier.
Professional chocolatier Joseph Marmor shares the techniques behind truffle-making, molding chocolate shells, and decorating chocolates with striping, colors, and sprinkles.
Each guest takes home the fruits of their own labors, including shells with truffle-ganache fillings and hand-dipped chocolate fruits, cookies, and pretzels.
As a chocolatier, Joseph Marmor seeks to create new flavors on a monthly basis. In this quest for constant innovation, it helps that his food-industry bona fides extend well beyond the world of chocolate. As a graduate of New York Technical College’s Hotel and Restaurant Management program, his experience includes food-and-beverage management positions at Hyatt and Hilton International hotels and a role in opening two five-star hotels overseas.
