What You’ll Do
Chef Lionel Flores, Jr. wants to introduce people to a different side of Texas—specifically its local cheeses, beers, and fish. That’s what guests to his three-hour workshop will find amid the colorful street-art murals inside Darwin’s Theory. They’ll also find plenty of hands-on practice in filleting and savoring fresh fish.
Mix and Mingle
Fueled by Texas cheeses, appetizers, and local beers, get to know Chef Lionel Flores, Jr. and the other guests at Darwin’s Theory.
Learn to Cook Texas Fish
After splitting the group into teams of two, Chef Lionel teaches everyone how to fillet and cook a local, in-season variety of fish.
Sit Down and Feast
The workshop ends with a meal, during which everyone eats their prepared fish, as well as a special dessert created by Chef Lionel.

An avid cook since age 11, he’s worked over the years as a caterer for private events, a chef in restaurants, and a purveyor of point-of-service technology.
