What You’ll Do
Chef Mamie Nishide wants you to know that it’s okay to slurp your food—that is, if you’re eating freshly made ramen noodles. During this workshop, Chef Mamie teaches you how to handcraft the noodles and savory broth that make ramen such a comforting winter food. You’ll also learn to cook a few of the add-in ingredients that lend the dish its versatility.
Learn the Ins and Outs of Ramen
Chef Mamie covers how to make ramen by hand, starting with the preparation of the dough and then cutting the noodles.
Add the Extras
You’ll prepare chashu (pork belly) and marinate tamago (soft-boiled egg) to round out the ramen ensemble.
Savor Your Soup with Drinks
Enjoy your ramen alongside beer or wine brought from home—bonus points for bringing sake. You’ll also take home some extra ramen-noodle dough.
Sushi Chef and Culinary Instructor
Chef Mamie Nishide’s first trip to the US was for business. Graduating from Baruch College, she worked a spell on Wall Street, but soon came to miss the sushi, tempura, and gorgeous desserts from her native Japan. So she turned from business to pleasure, starting Japanese Cooking Studio, starring on Food Network’s Sweet Genius, getting featured in Brides magazine, and giving at-home culinary lessons.
