What You’ll Do

Fermenting a drink with a “symbiotic colony of bacteria and yeast” might sound intimidating and opaque, but by the end of Myra Kornfeld’s two-hour kombucha-making class the phrase (affectionately abbreviated “SCOBY”) should be pleasantly familiar. Following a tasting of several flavors of brewed kombucha, Myra explains the potential health benefits of the drink and covers the ideal teas and sweeteners to use in making your own. She then demonstrates the brewing and fermentation process, sending each guest home with a jar of starter liquid and a SCOBY to call their own.
