What You’ll Do

Award-winning Chef Andrew Wood starts off this class by demonstrating how to hand-craft pasta like an Italian artisan. Once you’ve watched him work, get hands-on and immerse yourself in dough while Andrew discusses everything that goes into the deliciousness, including the history of pasta, regional styles and methods of the pastificio (a technique from Northern Italy), and different forms of pasta—from spaghetti to corkscrew fusilli. After working up a chef’s appetite, make your way to the dining room and sit down with the owners of Russet for a seasonal, family-style meal featuring your own delicious pasta creations.

Built on the idea that menus should evolve to accommodate seasonal, locally produced ingredients, the philosophy blossomed into practice in 2012 when he and his wife, Kristin, opened Russet. Andrew and pastry chef Kristin work to create earnest but elegant dishes, focusing on sourcing high-quality ingredients and letting natural flavors sing.
