What You’ll Do
Under the guidance of charcuterie expert William von Schneidau and two BB Ranch staffers, you’ll spin several cuts of pork into artisan sausages during this two-hour class. You’ll learn to cut, grind, season, and stuff meats, including bacon, pork chops, and ham, as you sip drinks and sample other bites of von Schneidau’s delectable charcuterie. After the class, you’ll take your bounty of victuals home with you—as well as a host of newfound meatpacking skills.

Learn About Different Cuts of Meat
Von Schneidau provides a demonstration about the different cuts of pork, and you’ll learn where bacon, pork chops, ham, and sausage meat come from.
Take Home 1 Pound of Sausage
You’ll cut, grind, season, and stuff several cuts of pork into delicious sausages to take home.
Participants also receive 10% off any additional charcuterie purchases on the day of the experience.
William von Schneidau
Boss Mann Butcher
William von Schneidau once made a living careening down snow-decked mountains, so it’s no surprise that he’s far from risk-averse in his other passion: butchery and charcuterie. A meat maven since the age of 14, William has been a forward thinker in the industry for the past several years, trumpeting the benefits of grass-fed beef and opening his own butcher shop that focused on sustainable whole-animal butchery. In his current venture, BB Ranch, William has created a ranch-to-table business model in which he buys and processes whole, grass-fed animals from local farms.
