Marcus's culinary journey starts with theft and a very secret, very pink Easy-Bake Oven. Raised by traditional great-grandparents, Marcus wasn't allowed to cook because he was a boy, but he still loved to watch Nana cook from scratch every night. Even she and Tata couldn't stop the flow of culinary inspiration, so the young cook stole his sister's meal-making toy and hid it from the world as he devised dishes in secrecy. When Marcus joined the Marines after high school, he was sent to lands as far as Rome and Berlin, which, he says, redefined his conception of spaghetti, pizza, and a world of other dishes.
At GRAZ Kitchen Fresh, Marcus's exploratory spirit, inventive mischievousness, and homey style of cooking—"a little rustic, simple, and fresh," he says—manifests as swiftly prepared breakfasts and lunches. The menu spotlights deli sandwiches, grilled cheese sandwiches, and breakfast sandwiches, along with refreshing salads and nutrient-rich juice blends pressed to order.
