Every night at 12:30 a.m., when antelopes are sleeping, the baking team at Great Harvest is milling wheat to a floury finish to craft the gourmet bread and baked goods on its menu. Take home a loaf of honey whole wheat ($5.00) or nine grain ($5.95), and cut fresh slices that hold together sandwich innards more tastily than a pair of thesauruses. Or choose a ready-made hand-held lunch from Great Harvest’s sandwich selections. Choose a type of bread, and then load it with premium meat slicelings and veggies ($4.95 for a half sandwich, $6.95 for whole). Pair it with an herbivorous tossing of salad greens ($3.55) or a protein-rich meat salad of chicken, tuna, or turkey ($5.95).
Great Harvest’s devotion to the art of bread making is audible in the early morning, when its on-site mill softly hums as it grinds grain into flour. All the freshly ground flour is used within two days, so each loaf plumps superbly with freshness in the oven. The friendly staff of breadsmen knead each loaf individually by hand, so bread comes out of the oven with old-timey, fun-to-slice irregularity.

Every day at Great Harvest Bread Company begins the same way: with employees milling wheat. They do it onsite, passing off the whole-wheat kernels to bakers within 48 hours of milling. Then, at the crack of dawn, bakers bake the wheat into signature breads, cinnamon rolls, cinnamon chip bread, scones, and muffins. By the time customers begin to filter into the bakery, the fresh baked goods are ready for eating, along with a cup of coffee or tea—which also goes well with the gourmet breakfast and lunch sandwiches.
