Guajillo's Restaurant wants to make one thing perfectly clear: its food is not Tex-Mex. Guajillo's, which dubs itself "the shortcut to Mexico" and holds a Trip Advisor Certificate of Excellence, prefers to transport its guests south of the border by plating up truly authentic eats. Many visitors choose to start these traditional meals with the fideo soup, a popular option that consists of angel hair pasta simmered in a tomato broth. From there, they move on to the menu's many Mexican specialties, such as the cochinita pibil. This Yucatan–style stew features shredded pork loin served with pickled red onions. In addition to the food, there's also a full bar stocked with margarita fixings and Mexican beers.
