Animated by the culinary wizardry of Chef Dan, Sushi Bear cooking classes teach students proper rolling techniques and Bolly Bear classes initiate students into the multifarious flavors of Indian cuisines. As students sidle up to the market’s wooden counter, Chef Dan provides in-depth instruction on how to ready and roll sushi, as well as identify hearts of palm disguised as california rolls. After they pare and pair ingredients to create colorful wraps, students can dine on their masterpieces and take home a personal bamboo mat and sushi knife for use in future sushi construction.
Alternatively, the Bolly Bear cooking class introduces aspiring chefs to the pungent spices, ingredients, and deft techniques of Indian cooking. During the course, which may run for up to two hours, pupils learn to prepare six Indian recipes, including a spinach-and-cheese saag paneer and a restaurant-style chicken or veggie curry. Pupils also churn up their own batch of paneer (Indian cheese). Having explored the subcontinent, students chow down on their feasts, then receive copies of class recipes written in invisible ink. Both courses also present cookers with an instructional DVD that guides at-homes chefs through the techniques learned during class.
