Over three hours, students learn how to make their own pancetta, duck prosciutto, and pepperoni, and they leave with recipes, instructions, and some of the products they made. Students also take home information on how to cure and dry other meats, such as capicollo and salami, and the newfound knowledge of how to bite the perfect happy face into a piece of bologna. Classes run Wednesdays from 6 p.m. to 9 p.m.
