Hedary's Mediterranean Restaurant
As far as Antoine Hedary was concerned, cooking always involved family. During his childhood in Beirut, he learned recipes and techniques from his grandmother and father, and the family opened two restaurants together when Antoine was a young man. After moving to America in the '70s, Antoine started Hedary's Mediterranean Restaurant, where he taught his children how to recreate his traditional Lebanese recipes.
Today, the family grows its own vegetables and herbs, which are chopped into tabbuli or sprinkled over grilled salmon. They also make their own spicy Lebanese sausage and whip up batches of hummus, which are served on mezza platters alongside other small bites, such as stuffed grape leaves. For their signature dish, baked chicken, chefs patiently baste the meat with a marinade of lemon, garlic, and olive oil.
