About Heirloom Kitchen
As the head chef of Heirloom Kitchen, Wyatt Evans counts foragers, local farmers, cheesemakers, and other artisans among his best friends. Without their products, he and his kitchen staff would be hard-pressed to craft their food, which they dub "modern farmhouse cuisine."
There's no mistaking the farmhouse part of the restaurant; using seasonal ingredients to craft hearty dishes like grilled lamb sausage and beef shoulder roast with a smoked onion crust, their food tells a clear story of season and setting in the upper reaches of the Midwest. But the restaurant puts a modern spin on these and other dishes, steering clear of simply quoting rustic favorites. To be sure, many of its recipes—such as the roast chicken, served with artfully placed, colorful cuts of fresh vegetables—exhibit thoughtfulness, refinement, and culinary skill in both taste and presentation.
