At Heritage, located within the luxurious Whitney Peak Hotel, Chef Mark Estee prepares bold, memorable food that befits the local history. “At Heritage, we are aiming to define [Northern Nevada] cuisine,” he recently told the Reno Gazette-Journal.
A 2013 James Beard Award finalist, Estee expertly blends rustic and refined culinary elements in his dishes. He roasts pork chops, scallops, and other proteins on a wood-burning grill before adding fresh herbs and infused butters. But he also has a playful side, presenting upscale ingredients in the Double Down, an almost comically indulgent sandwich of foie gras, brioche, and maple syrup. While Estee and his team busy themselves in the kitchen, bartenders pour libations from a drink menu brimming with craft cocktails and local beers.
