For 21 years, Hi Bombay has simmered and grilled an extensive menu of traditional North Indian cuisine. Packing an appetizer platter with samosas, pakora, pappadam, and other spicy fried veggies, Nizam's Choice eradicates edible indecision without the need to place a Ouija board planchette over the menu. The roasted poultry of the chicken-tikka-masala entree takes on extra tenderness in a spicy creamed tomato sauce, and raisins, cashews, and almonds add texture to the rich lamb korma. Channa baji, known as "the sultan's summer supper" for its rich spice blend and infestation of palace gardens in its wild form, melds chickpeas with tomatoes, ginger, and garlic.

Chefs at Hi Bombay have honed recipes for curry, vindaloo, and spicy masala over the course of 23 years, yielding a carefully spiced menu of Northern Indian classics and regional seafood specialties. Fresh-baked naan bread and whole-wheat roti sop up sauce from lamb and chicken dishes cooked in a clay-oven tandoor, and fish labadar from the Bay of Bengal simmers in a creamy tomato sauce.
