Since 2005, Billy Rhodes has amassed a considerable collection of trophies by preparing his signature barbecue recipes at competitions throughout the country. Visitors can sample those award-winning meats by the plateful at Hickory Prime BBQ, where Rhodes serves as pit master. He smokes brisket, pork, and other classic barbecue meats, plates fresh oysters and smoked fish dip, and prepares ribs following a method that he explained on The Hampton Roads Show. First, he seasons them with a dry rub that absorbs for four hours, and then sends them into the smoker. He finishes by steaming them in tightly wrapped tinfoil with honey, brown sugar, and splashes of apple juice.
