To make the range of dishes at Himalayan Heritage, the restaurant's chefs must be masters of the cuisines of Northern India, Nepal, Tibet, and Indo-China. They sizzle meats and kebabs in tandoor overs, craft more than 10 styles of vegetarian curry, and toss biryani rice with a choice of meats or veggies. But they also work within traditional cooking methods to let their creativity and chef's intuition shine. They name these dishes their chef specialities, which can range from duck steaks with Himalayan spices and Nepali-style polenta to whole grilled tilapia with sesame and mustard seeds. The one accommodation they give to Western cuisine is the modification of the spice level from kilopeppers to tame heat to milder levels while maintaining the dish's flavor.
