Hopsters Brew & Boards
"I spent 10, 12 years not knowing what the hell went in [beer], but I was drinking it every day," admitted Hopsters cofounder Lee Cooper. "It's kind of odd what things you consume on a daily basis and you have no clue what it's made up of." Teaching consumers more about their beer was part of the impetus for Hopsters Brew & Boards, a brewpub where patrons can not only taste private-label beers but also help brew them.
Lee's other motivation for opening Hopsters was his English heritage. Upon moving to the States in 1996, he found it difficult to track down the cask ales and stouts of his home country. So these beer types often rotate into Hopsters' house beer selection, which has included the English Bob, a seasonal pale ale in the style of Boddingtons.
Despite the transatlantic inspiration, Lee's process is purely local. He's partnered with local farms to supply the hops, as well as to supply the charcuterie found on the food menu, and he uses only local sunshine to light the bar by day.
