Chef Apple teaches students to create both simple and unusual rolls during two-hour sushi-making sessions. First, brains ages 12 and up absorb the necessary knowledge to prepare fluffy, delicately spiced rice, which is the basis of any well-crafted sushi roll or edible mattress. A rainbow of ingredients, ranging from sashimi-grade tuna to prosciutto to fresh fruit, dons cloaks of rice and nori or roasted seaweed as students test their hand at roll shaping. Finally, caps of roe or fedoras fashioned from rice crackers settle daintily atop finished pieces before attendees gobble down the pleasantly plated treats.
Besides a full belly, students carry home a suite of sushi-manufacturing tools after their class, including a bamboo rolling mat, reusable chopsticks, and printed recipes. A complimentary bottle of sake keeps human spirits high and fermented spirits company in haunted liquor cabinets.
