India Palace Restaurant
At India Palace Restaurant, chefs weave together an extensive tapestry of Indian, Nepalese, and Tibetan dishes. One of their specialties, the Mt. Everest stew, requires a grocery list of ingredients, including lamb, chicken, rice, seasonal vegetables, and a hint of timbur. Other dishes, however, are far simpler. For instance, mo-mos—which are famous in Tibet and Nepal—merely consist of dumplings stuffed with chicken or vegetables. Beyond that, more than 20 of the restaurant's dishes forego meats altogether, including the baigan bhartha, which features roasted and pureed eggplant in a special blend of spices.
