Jake's Smokehouse Bar-B-Que
It can take a long, long time for something good to happen. That's what Jake of Jake's Smokehouse Bar-B-Que learned when he meandered across the country for years sampling different types of barbecue, searching for a process to make the very best ribs, wings, and pulled pork sandwiches. The answer he eventually settled on: slowly smoking meat over a hardwood fire. And with that a barbecue empire was born, with the first meat falling off the bone in 1999.
The Gettier family (who own the restaurant) and the rest of Jake's team arrive early every morning to fire up the smokers. It's a laborious process, but one that leads to tasty rewards. Take the signature smoked wings, for example. To start, the pit-masters coat the chicken in a proprietary rub, then cook the wings in the smoker for about 90 minutes, before finishing them in the fryer to render a crispy exterior ready to absorb sweet or spicy sauces. Ribs and pork stay in longer, and those extra hours not only add flavor, but break down the meat until it's tender enough to be slipped into an envelope and mailed to Mama. Jake's signature sauces add flavor to the meats, which pair with classic sides such as barbecue beans and desserts such as banana pudding.
