The self-styled pizza men at John's Pizza eschew many modern conveniences in favor of an ever-evolving flavor for their pies. They cook every pizza in a coal-fired brick oven, a construct that seasons with age. No two pizzas ever taste exactly the same, and that's the way they like it. They don't use thermostats or thermometers either. Instead, they undergo months of training, learning how to spot crispness by the color of a crust, judge degrees by the crackle of a fire, or taste cheese just by staring at it.
Pizzas aren't the only thing John's Pizza perfects. The chefs create a variety of pasta dishes—from whole-wheat penne to spinach ravioli—as well as classic Italian entrees like eggplant parmigiana and chicken marsala. Sandwiches and paninis are filled with grilled chicken, roasted red peppers, and fresh mozzarella, and dessert offerings of tiramisu and traditional cannoli finish meals on a sweet note.
