Chefs pair tuna and avocado with eclectic flavors that include dried squash, salmon skin, pickled radishes, mint leaves, diced tomatoes, and limes, and sliced cucumbers and soy paper hold everything together. Alternatively, chefs can tuck ingredients inside a sheet of seaweed rolled into a cone shape, or drape sliced fish atop tiny mounds of rice.
