Inside the airy, rustic-modern eatery, he begins meals with a spread of paired-down small plates, like the htipiti—roasted red peppers with feta—and skordalia—potatoes with lemon. Catering to carnivores and vegetarians alike, he whips up main dishes such as oregano-brushed wild salmon and white bean and artichoke prasorizo with pearl onions, grape tomatoes, and kefalograviera cheese.
