The eponymous ko-ryu ramen, for example, tops noodles, sprouts, and pork with a broth mixed with 1–5 drops of a hot sauce. The sauce blends spicy miso from Japan, hot-pepper paste from Korea, and habanero peppers from America. The restaurant uses an abundance of choices of vegetables and even has a special broth that is lighter than the usual tonkotsu ramen.
