Kombu Kitchen is open for dinner 6 a.m.–9 p.m. Monday–Wednesday, 6 a.m.–11 p.m. Thursday–Friday, and 7 a.m.–3 p.m. on Sundays.
Kombu Kitchen's executive chef, Kristen Thibeault, got her culinary training at Le Cordon Bleu—and in 2013, she put it to work in the S. Pellegrino Almost Famous Chef Competition (which she ended up winning). But there's even more to her story, like the time back in 1994 when she hosted a vegan dinner party for Sting and his wife, Trudie Styler. Or that time in 1992, when she learned about the importance of sustainable sourcing from Anita Roddick, co-founder of The Body Shop.
The farm-to-table menu at Kombu Kitchen reflects Thibeault's star-studded culinary history with its complex flavors and sustainable, locally sourced dishes. The menu rotates regularly to highlight seasonal produce, but past dishes have included a salmon burger with Asian slaw and a risotto with spring peas. For an extra natural touch, the eatery is flooded with sunlight during the day, thanks to its floor-to-ceiling windows and convenient location on the planet Earth.
