Central to the philosophy of Kublai Khan Restaurant is a tale of Genghis Khan's own dining habits: After a long day of hunting, Genghis Khan and his Mongolian warriors would mix up a hearty meal of vegetables, spices, and slices of meat, place the melange of food on top of their shields, and then place the shields on top of a roaring fire to cook everything. The large, round iron shields supposedly were the perfect cooking surface, and the largest of the shields would be used to create a special feast for Khan and his favorite warriors—the ones who made his hair look the prettiest before battle. 

Kublai Khan Restaurant's giant Mongolian grill pays homage to that tale; it can cook up to 30 meals simultaneously, and the eatery lets diners design their own Crazy Bowl meals with their choice of vegetables, proteins, carbs, and sauces. There are plenty of predesigned meals, as well, such as the fiery kung pao with your choice of protein, the vegetarian Buddha's Feast, and the specialized Khanifornia sushi roll.
