In between rounds of applause, they quell hunger pangs by grilling everything from chicken and vegetables to filet mignon and lobster. Behind the bar, sushi chefs demonstrate a quieter form of showmanship. Their expert hands prepare nigiri, sashimi, and more than 50 different rolls, arranging the pieces to create elegant platters with artistic flair.
