With experience creating a host of eye-catching and appetizing rice-wrapped morsels on the restaurant's regular menu, Kyoko's master chef Yusuke Honda imparts skills and wisdom to nori novices in an enlightening two-hour class. The session opens with a brief history of the grain-laden luxury followed by an overview of the sushi-making process, including rice preparation, nigiri- and maki-making techniques, and how to track down the mythical wasabi-elk. Sushi gurus provide all necessary materials, and trainees complete their epicurean enlightenment by dining on their newly developed delicacies. The two-hour classes take place Saturdays from 12 p.m. to 2 p.m. throughout February and March.
