Kyoto Sushi Restaurant’s chefs forge a menu of conventional and innovative sushi creations along with traditional Japanese entrees. Behind the sushi bar, chefs hand-roll fresh seafood and vegetables with the effortless skill of a magician rigging an Uno deck ($4.25+). The signature creamy maki departs from the norm by swaddling a core of shrimp tempura, unagi, and mayonnaise entirely in avocado ($17). The piquant Fireball maki balances its ripe avocado, pleasantly sweet unagi sauce, and truffle oil with a fiery combination of spicy tuna, jalapeño, and chili oil that can smelt silverware ($12). Turning to the kitchen’s stovetops, the chefs encase asparagus and scallions in a cocoon of sliced beef before broiling the spears in teriyaki sauce to create the asparagus beef rolls ($19.95), and the tempura udon douses its shrimp and vegetable tempura with a seasoned broth full of thick noodles ($10.50).

Hanging lamps gently light the dining room’s sushi-bar seating and scattered tables, which can accommodate more than 80 diners or 25 fully suited scuba divers. Although Kyoto Sushi Restaurant doles out glasses of soda and juice for premeal toasts, patrons can bring along their own bottles of wine.
