The chefs at La Caye fill their kitchen with the swirling aromas of Haitian cuisine. Their claim to fame is the grilled conch with it's spicy mango sauce. Not to be outdone, The Village Voice claims La Caye to have "The best conch in sauce in NYC". They add signature Haitian flavors—little bites of lime, dashes of thyme—to their stewed cabbage with chayote for their legume berejenn and to their kabrit la caye, stewed goat in the house's Haitian Creole sauce. They also split baby tomatoes and fresh apple over a bed of mixed greens and carrot, topping their salade jardinière with a balsamic mango vinaigrette.
