Las Canarias' menus reel in net after net of Texas' finest seasonal and local landsea animals and landsea produce. For dinner, start with an heirloom tomato and grilled avocado salad with black garlic and sea salt ($12) or country fried Texas quail with pickled corn relish ($12). For the meal centerpiece, opt for Colorado lamb with grist mill polenta and tomato pepper chutney ($42) or carmelized sea scallops with watermelon and fresh dill ($32).
