When Carmelo Petit, a native of Caracas, Venezuela, first moved out of his family home, he found himself constantly recreating his relatives' recipes whenever he entertained guests in his home. He enjoyed cooking for friends so much that he eventually decided to enroll in culinary school, then went on to hone his skills at the Four Seasons and various restaurants around Philadelphia. Today, at Latin Flavor, he prepares many of his home country's classic recipes, such as arepas stuffed with anything from queso blanco to roasted pork. Other Caribbean-style dishes include oxtail stew, salmon a la plancha, and churrasco, as well as a special seafood paella served on Fridays.
