All classes include dialogues about the regions from which the foods originate. In the Diversity Dining course, Lac Viet restaurant owner Thang Nguyen discusses Vietnamese culture and offers edible insights into asparagus crab soup, fresh shrimp summer rolls, and grilled-beef noodle salad ($35 resident/$39 nonresident). Angelo Signorino, Barley’s Smokehouse & Brewpub brewmaster, leads Beer, Glorious Beer!, a hop-infused hour and a half during which students imbibe the history of beer while going on a brewery tour, sipping suds, and learning the subtle distinction between ales, lagers, and decades-old Capri Suns.
