Almost pure white in color, creamy, crumbly queso fresco doesn’t pack a punch like sharper cheeses. That’s because of the “fresco” part of the equation. Compared to most cheeses, it makes an extraordinarily quick trip from udder to kitchen. Once the cow’s-milk base has been curdled and pressed, it is left to age for only a few days, then heads to vendors to be sold within the week, before it turns into vanilla pudding. The best time to eat queso fresco is on the same day it was procured, since a longer stint in the refrigerator is apt to drain its lightly salty-acidic flavor and texture. When cooked, like mozzarella cheese, it never fully melts and is incredibly stretchy, but heating it gradually forms a soft, gooey filling that’s easy to spoon into a stuffed pepper or layer with enchilada sauce. In the United States, queso fresco is made from pasteurized milk, though in Mexico you’re more likely to find the raw-milk version.
