In two-hour classes of 15 or fewer students, Dr. Erica Steele of the Essential Wellness Center expounds upon easy ways to make meals with raw, organic, unprocessed ingredients that never encounter a stove or microwave. Themed classes—which explore subjects such as 10-minute meals and kid-friendly fare, as well as seasonal topics like “Pumpkin and Spice with Everything Nice” and “Raw Food Thanksgiving”—feature live preparation demonstrations and bestow students with take-home recipes and a Food as Medicine guide upon departure. Dr. Steele’s 21-day detoxification program focuses on designing customized meal plans for each client, which use raw foods to bolster metabolisms and deep-cleanse the body.
