Long John Silver's
In 1969, you wouldn't have expected to find a seafood chain starting in Lexington, Kentucky. But that was the point. Restaurateur Jim Patterson wanted to make seafood more accessible to the coast-less and, therefore, sea monster–less Midwest. Since then, his chain, Long John Silver's, has become known for its battered fish and shrimp baskets. It's not all seafood, though. Guests also can order battered chicken and sides such as fries, coleslaw, and green beans. In recent years, the company has made a push for a healthier menu, supporting sustainably caught seafood. In the sides area they offer healthy alternatives such as steamed broccoli, hand cut and cooked-to-order onion rings, sweet potato fries, corn on the cob, and rice pilaf. The oil that Long John Silver's uses to cook its dishes is trans fat free.
