Even as a child, a basic taco or burrito was only the starting point for Chef Omar Covarrubias. He spent his time inside his family’s hotel kitchen in Mexico experimenting with traditional Mexican dishes. And now at the helm of his own eatery, Los Tacos by Chef Omar, he whips up creative twists on classics, from filling tacos with breaded chicken and chipotle-lime-mayo coleslaw to stuffing burritos with ancho-marinated pork and grilled pineapples. Chef Omar, who won the National Latino Chef of the Year at the 2011 Flavors of Passion Awards, builds his popular wet burrito dish with chipotle ground beef, Mexican cheese, rice, and beans topped with a three-cheese sauce to serve as accompaniment to chilled margaritas.
