Lotus Thai Cafe
In 2015, Terisa Cuskelly and her husband traveled to Thailand and returned with a new vision for their fusion restaurant, My Thai Cuisine. Such a new vision, in fact, that they even decided to change the name. After a few months, this plan was a reality: they are now the proud owners of Lotus Thai Cafe, where casual, authentic Thai street food is the focus. Below are a few highlights of the revamped menu.
- Comforting staples include soups like creamy tom yum and tom ka gai, as well as less familiar recipes such as boat-noodle soup. “It’s almost like a pho," Terisa told Gambit. "But the broth is a Thai-style pork broth that is made thicker by adding a little bit of coconut milk.”
- Classic, colorful curries fill the menu, as do chef's creations, such as khoa soi. Originating in northern Thailand, this spicy dish features coconut curry and egg noodles topped with pickled mustard greens, cabbage, bean sprouts, fried shallots, and cilantro.
- All the quintessential Thai noodle dishes are on Lotus Thai Cafe's menu, including pad thai, pad woonsen, lad nha, and drunken noodles. Thai glass noodles also make appearances in several appetizers.
