Louis Pappas represents the culmination of more than 80 years of family experience in the restaurant business. The current Louis incarnation of the Pappas family uses his rich family heritage to concoct dishes made swiftly but never hastily. Each is created with a gentlemanly nod to tradition by borrowing from century-old recipes, hand-approved by Hermes, or at least a guy wearing a helmet.
