In 1963, Mama Rosina and her husband Saverio left their mountaintop village in Calabria, Italy, in search of a better life. They sailed to America with their most treasured items: Mama Rosina’s Italian recipes. Those very recipes make up the menu at Mama Rosina’s, where customers can dine on traditional veal and chicken marsala and parmigiana dishes. Her pork specialties find the chops stuffed with Italian spices and simmered in red tomato sauce, or charbroiled and topped with sausage, sun-dried tomatoes, escarole, and potatoes. The menu’s pasta offerings contain cavatelli, rigatoni, and fettuccine noodles doused in ground beef and cream sauces, and 12-inch pizzas can be topped with meatballs, clams, or calamari.
