About Market Bar-B-Que
It's hard for a lot of 70-year-olds to embrace a modern trend and change, but Market Bar-B-Que isn't a lot of 70-year-olds. The brick-and-mortar restaurant, which was born in 1946, launched a food truck in 2016 in order to deliver its beloved barbecue to even more hungry mouths. The pig-pink truck serves up the same ribs, pulled pork, barbecue chicken, and brisket cooked out of the restaurant's smoking pit (the food is later seared to order in the truck).
That brick smoking pit was specially constructed for Market Bar-B-Que, and the heat and smoke from the wood inside strategically penetrate the meat to give it its signature flavor. Diners then add their own sauce if they think they need it. Meals are accompanied by appetizers of cheese curds and catfish bites, sides of corn bread and collard greens, and drinks of beer and wine.
