Matua's Sushi Bar & Islander Grill
Matua's Sushi Bar & Islander Grill brings the flavors of Hawaii, Guam, and, of course, Japan to San Diego. The people responsible for this cross-cultural translation of cuisine are the Rodriguez family, transplants from Guam who moved to the area some 50 years ago.
Though they now call California home, they have passed down islander recipes through the family for years—recipes that have since made their way on the restaurant's menu. These include everything from beef, chicken, and shrimp kelaguen to kalbi ribs to Grandma Rosie's potato salad.
Island flavors permeate fresh sushi rolls, too. The Tidal Wave roll, for instance, wraps around spicy tuna, shrimp, and cucumber, all of which is topped with tuna, yellowtail, fresh salmon, avocado, thin lemon slices, spicy crab, cilantro, lemon juice, and sesame seeds. Matua's sushi chefs also whip up Chamoroll rolls and Gumataotao rolls, as well as fold fresh fish into cone-shaped hand rolls.
