About Mayahuel

When it comes to alcohol, every region has its icons. France has wine. Kentucky has bourbon. Mexico? Mexico has tequila, the capricious spirit distilled from the blue agave plant. After spending years researching his nation's most revered liquor, Ernesto Delgado was finally ready to promote it. Thus, Mayahuel was born. A dedicated "tequila museum," the bar and restaurant takes its name from the Aztec goddess of the agave plant itself. This deep reverence for Mexican cuisine and culture shows through during each visit.

As expected, tequila is a star; at the dedicated bar, guests can order straight pours or let the seasoned mixologist craft them some margaritas (the house specialty includes watermelon, agave nectar, and lime juice). There's even a dedicated mezcal bar, which showcases the earthy, smoke-filled flavors of tequila's hipper cousin. However, these spirits aren't the only attractions; Mayahuel's chefs produce inventive takes on regional and historical Mexican favorites, from Puebla's mole poblano to pipian verde, a dish made with pork and pumpkin seeds which dates back to Mexico's Aztec past.

Although Mayahuel's day-to-day operations keep him plenty busy, Delgado remains tireless in his quest to educate the masses about tequila's versatility. He frequently hosts tequila dinners, with menus that showcase different tequilas and the dishes with which they pair best. He also maintains the YouTube channel MayahuelTV, which combines features about the restaurant with lively videos centered on Mexican culture.
