Mitsuba operates under the direction of executive chef William Chen, whose resume includes more than a decade of experience as a head sushi chef in Japan. And his menu certainly reflects that expertise, featuring more than 30 signature rolls. In particular, the Mitsuba Lobster roll combines tempura lobster, avocado, and mango finished off with marinated crabmeat and a sweet chili sauce to give it a vibrant red color just like lobsters after they've been embarrassed. Even without those signature rolls, though, Mitsuba's menu would be extensive enough—it features variety of hibachi dinners, teriyaki dishes, and noodle bowls, plus other favorites such as shrimp and vegetable tempura.
