When Brent Thrash came to school at CU-Boulder, he missed the tasty tacos of his native Austin, Texas—especially the breakfast tacos, which have some interesting flavor combinations. After graduation, he eventually opened Moontower Tacos (a name that nods at the movie "Dazed and Confused") to sate his cravings and riff on his favorite dish.
The food here comes in three main categories: breakfast tacos, tacos, and not-a-taco. Under the breakfast heading is the Suicide, which has tortillas topped with scrambled eggs, chorizo, bacon, potatoes, queso, avocado, and red salsa. The lunch and dinner roster, meanwhile, features the Mahi, which bursts with mahi-mahi, sweet Asian slaw, and cilantro, as well as The Colonel, whose hand-battered natural chicken, queso, pico de gallo, and lettuce can only be eaten while standing at attention.
Moontower's staff serves its tacos in a dining room decorated with cool tones of blue, teal, and gray.
