Mosaic's chef-apprentice Tyson Gee assists with the unique menu, and was a member of the culinary team that created a special meal for Prince William and Kate Middleton on their visit to Canada. Spoons embark on Cousteau-inspired dives while digging through the northwest-style chowder for morsels of halibut, salmon, and mussels ($10); a plate of British Columbia sablefish sashays over to tables flanked by a supporting cast of brussels sprout hash and young carrots ($34).
