Chefs at Mr. K’s Barbecue patiently smoke their southwestern-style brisket, pork, and chicken, paring juicy servings of meat with classic sides and desserts. One-meat dinner plates ($10) treat taste buds to a complete mealsperience, side-kicking a choice of chopped brisket, pulled chicken, or one of seven other meats with two sides, such as fried okra, Country Fair corn, or mac ‘n’ cheese. Sandwiches border a half pound of barbecue ($7) with bready handles, and barbecue by the pound, including the half rack of ribs ($12), is served simply in dry-rubbed tuxedo.
The smoked Thanksgiving turkey adds the centerpiece to holiday spreads while leaving ovens free to bake potatoes or develop a crush on the microwave. Weighing in at 12–14 pounds, the turkey is smoked for upward of eight hours while soaking in a rich mesquite flavor and donning a lustrous, golden coat.
