In the Farm to Table Organic Food & Wine class, connoisseurs savor a flight of organic, biodynamic, and naturally produced wines alongside a menu of three mouth-watering pairings, designed by certified sommelier Dylan York. Students who choose Regional Italian Cuisine & Wine taste their way from Tuscany to Sicily. As a certified sommelier guides them through one sparkling, two white, and two red wines, guests nibble on three traditional dishes from northern, middle, and southern Italy, as well as light antipastos. For a hands-on, food-focused experience, Executive Chef Ryan Smith demonstrates how to make gourmet flatbread pizzas using quality ingredients during the Pizza and the Wines That Love It class. Throughout three small courses of pizza, students taste six food-friendly wines while discussing how to use their current stock of frozen pizzas as spare car tires.
